Pregelatinized starch hydrates and develops viscosity in cold water without a second cooking step; convenience and early binding are its main advantages.
What is: Pregelatinized starch (α starch)
Pregelatinized or α starch has been gelatinized and then dried. Gelatinization disrupts the ordered granule structure, allowing the dried material to hydrate again during use. Cold dispersion is not necessarily complete molecular dissolution.
01 / How it works
Pregelatinization describes physical processing, not one chemical modification code. Native or chemically modified starch can be pregelatinized, and partial versus full treatment changes cold-water behavior. The name alone does not establish acid, baking or shear tolerance.
02 / Typical modification process
Slurry preparation → gelatinization and drying, for example by a drum route → milling and screening → inspection and packing. Particle form and hydration speed vary with the route.

04 / Choosing between modified starches
Prioritize for cold thickening, early binding or elimination of on-site cooking. For strong acid, shear or sterilization, determine whether additional chemical modification is needed. If cooking is available and process stability is the main goal, compare appropriate E1412, E1422 or E1442 grades.
Typical application decisions
Instant soups and cold seasoning mixes
Develop body without a cooking vessel while controlling lumps and final thickness.
Baking premixes and formed doughs
Provide early binding and water distribution without making dough unworkably sticky.
Cold-prepared fillings
Target immediate depositing consistency; any later baking requires its own validation.
Feed pellets
Use an appropriate feed grade and evaluate durability and water stability; cold binding does not guarantee resistance to disintegration.

Listed packaging: 25 kg. Origin: Vietnam. Request the grade-specific TDS and batch COA; confirm botanical source, cook-up or cold-hydrating form, shelf life and storage conditions.
Compare viscosity only with the same method, concentration and temperature programme. BU values are not directly comparable without test conditions. Validate performance and dosage in the actual formulation.
Use and development trials
- Define the required hydration time and working viscosity before trials.
- Premix with compatible dry ingredients or add gradually into mixing water; avoid dumping powder into one spot.
- Fix water temperature, powder/water ratio, mixing intensity and rest time.
- Check viscosity after further heating, prolonged soaking or high shear; test feed pellets under actual handling and immersion conditions.
Dosage and trial guidance
No single percentage suits all pregelatinized starches. Raw material, degree of pregelatinization and target consistency determine dosage. Compare hydration speed, dispersibility and working time at the actual water temperature and powder/water ratio before setting a use level.
Validation priorities and technical references
Priorities: cold-water viscosity at a defined concentration and temperature, hydration time, lumps, uniformity and viscosity growth during resting. Confirm particle size, partial/full pregelatinization, any additional chemical modification and food/feed grade.
